Baby Bok Choy Stir Fry

My Produce Items: Baby Bok Choy, Broccoli, Leek
1 baby bok choy cut into quarters
1 head of broccoli cut into small pieces
1 sliced carrot
2 tablespoons of chopped up leeks
1 cup of green beans
1 package of boneless skinless chicken for stir fry
1 cup of sweet and sour sauce

Boil on the stove the green beans and carrots. They'll take longer to boil than the bok choy and the broccoli so boil them for a good 15-20 minutes before adding the bok choy and broccoli. Boil for another 10-15 minutes until all vegetables are soft.

Brown the leeks and chicken pieces in a frying pan. Add 1/2 a cup of sweet and sour sauce and mix well until chicken pieces are coated. Drain vegetables and add to frying pan. Add an additional 1/2 a cup of sweet and sour sauce and mix well coating evenly. Simmer for a few minutes until everything is evenly cooked.

Serve over rice.

Final Verdict: Good

I make chicken stir fry often using carrots and broccoli. It's always really good with rice. The bok choy was nice and soft and served as an appetizing addition. You can basically make stir fry with any vegetables. I usually use World Harbors Maui Mountain Hawaiian Sweet n' Sour sauce found in the asian foods isle. It's good and it has all the flavoring you need so you don't have to add any additional spices.
