Cauliflower - Warm Salad

Lightly clean cauliflower, cut in flowers, steam until soft.
Vinaigrette: whisk together:  2 spoons of vinegar, 2 spoons of oil and 1 tea spoon of mustard, salt&pepper and any spices you like (herbs, curry, pepper flakes). Add (if you like it): fine diced dill pickles, capers or fine diced fresh peppers or onions.
Mix slightly warm cauliflower flowers and dressing and let cool.

Side dish: as salad.
Main Course: serve with a boiled or a poached egg on toast.

CAULIFLOWER: form of cabbage. Same family as brussels sprouts, kale, broccoli an collard greens. Low on fat, low in carbs, high in dietary fiber and vitamin C.
